* Brettanomyces is a non-spore-forming yeast genus in the Saccharomycetaceae family. Brettanomyces yeast is mostly used in Belgian beer styles such as Lambic, Kriek, Faro and Geuze. A Brett IPA, for example, produces a complex tropical fruity flavour in young beer and an earthy, musty, smoky tone with longer storage times. The flavour is mainly caused by fatty acids, fatty acid residues, phenolic compounds and acetic acid esters.
