Fermentis SafAle SafAle W-68™!
This specialty yeast was selected to produce aromatic beers with a typical phenolic character (clove and peppery notes) as well as rich fruity and floral flavors. It is particularly well-suited for a variety of wheat-based beers and fruity-spicy oriented styles. SafAle W-68™ has medium sedimentation: it forms no clumps but a powdery haze when resuspended in the beer.

Sensory Profile:
SafAle W-68™ is ideal for producing aromatic German-style wheat beers with a typical phenolic character (clovy aroma) and a rich fruity and banana note.
Dosage / Temperature:

Dosage: 50 to 80 g/hL (0.07 – 0.11 oz/gal), ideally at 18°C – 26°C (64.4°F – 78.8°F).
Usage:
Direct Pitching:
-
Directly pitch into the fermenter at a fermentation temperature of 20°C – 32°C (68.0°F – 89.6°F).
With Prior Rehydration:

Sprinkle the yeast in 10 times its volume of water or wort at 20°C – 28°C (68.0°F – 82.4°F).

Leave to rest for 15 to 30 minutes.

Gently stir.

Pitch into the fermenter.
