Cascade has a unique floral, spicy aroma, mainly due to exceptionally high levels of some aromatic oils. Test brews and tastings have also demonstrated the excellent bittering quality of Cascade, which produces little harsh or lingering bitterness even at high IBU levels (over 40). This variety harmonizes well with Centennial or Amarillo and is often used in Pale Ales and IPAs to create a balanced and aromatic flavor profile.
